Frequently asked questions about scaling recipes

How do I scale a recipe from 4 to 8 servings?
Divide desired servings by original servings to get the scale factor: 8 ÷ 4 = 2. Multiply every ingredient by 2. So 1 cup flour becomes 2 cups, 2 eggs become 4 eggs, 1 tsp salt becomes 2 tsp salt.
Can I halve a recipe that calls for 3 eggs?
For odd-numbered eggs when halving: use 1.5 eggs (beat one egg, measure half by volume — about 1.5 tablespoons beaten egg). Alternatively, use 2 egg yolks or 1 egg plus 1 tablespoon water for some recipes.
Does baking time change when scaling?
Baking time doesn't scale linearly. When doubling, add 25-50% more time and check early. When halving, reduce time by about 25%. Use an instant-read thermometer for accuracy. Pan size changes affect timing more than quantity.
How do I convert cups to grams?

Should I scale spices the same way?

How do I scale recipes for different pan sizes?
Calculate pan areas: round pan area = π × r². Compare areas and scale ingredients by that ratio. Example: 8-inch to 9-inch round: (4.5² × π) ÷ (4² × π) = 1.27, so multiply ingredients by 1.27.
